摘要: 酒石酸及酒石酸盐是一类常见且重要的化学物质,与我们的生活息息相关。本科普项目从葡萄酒中酒石析出这一现象出发,设计了酒石酸提取、酒石(酒石酸氢钾)析出模拟实验、酒石酸钾钠的趣味应用(压电效应)等一系列实验。本项目一方面向公众科普酒石的无害性,引导公众通过化学视角揭示生活中常见现象背后的科学原理;另一方面带领公众走近酒石酸家族,了解酒石酸及酒石酸盐的化学性质和应用价值,向公众展示化学学科在人类生活、科学发展中的重要作用。本实验原理易懂、操作简单安全、实验现象明显,既能展示化学之美,又能展示化学之用。本项目通过展板、视频、趣味实验互动等展示手法,针对不同人群设计多种科普互动方案,激发青少年对化学的学习兴趣,构建人们对化学的科学认知。

Abstract: Tartaric acid and its salts represent a class of chemically significant compounds that are ubiquitous in daily life. This public science initiative investigates the phenomenon of tartar crystallization in wine through a series of carefully designed experiments, including tartaric acid extraction, simulated potassium hydrogen tartrate precipitation, and demonstrations of potassium sodium tartrate’s piezoelectric applications. The project serves dual purposes: it educates the public about the harmless nature of wine crystals while revealing the scientific principles behind common observations, and introduces the tartaric acid family’s chemical properties and practical applications, thereby highlighting chemistry’s crucial role in both everyday life and scientific advancement. Featuring straightforward protocols, safe operations, and visually striking results, these experiments effectively illustrate both the aesthetic and functional dimensions of chemistry. Utilizing diverse presentation methods such as exhibition panels, instructional videos, and hands-on activities, the project offers tailored engagement strategies for different audiences, aiming to stimulate adolescents’ interest in chemical sciences and promote public scientific literacy.
