Carbohydrates take the stage, who dares to compete?

Abstract: This study examines representative compounds from monosaccharides, oligosaccharides, and polysaccharides, using a competitive entertainment format to elucidate carbohydrate chemistry. The work systematically analyzes the formation mechanisms of both intermolecular and intramolecular hydrogen bonds along with their key influencing factors, while providing scientific explanations for caramelization and Maillard reactions. Adopting a “synthesis-assembly” dual perspective, the paper presents recent research advances in carbohydrate chemistry. It simultaneously offers accessible scientific knowledge about glycoconjugate preparation (including glycosides and glycolipids) and introduces fundamental concepts of supramolecular chemistry. This integrated approach reinforces core organic chemistry principles while promoting a comprehensive understanding of carbohydrate compounds.
